This is a quick recipe that my wife and I really enjoy. I like it because it tastes good and I get my taco fix in!

Medifast Details

Serves two with one lean, two green and three condiments each


  • Iceberg Lettuce, whole
  • 1 cup Diced Red Peppers
  • 1 cup Plum Tomatoes, raw
  • 1/4 cup Onion, raw
  • 1 Jalapeno Pepper
  • 1 1/2 tbsp Cilantro
  • 3 tsps Lime juice ( one lime )
  • 1/4 cup Chicken Broth
  • 3/4 lb Pork Tenderloin, uncooked
  • 1 cup Jicama
  • Red Pepper flakes


  • Substitute diced lettuce for the whole
  • Drop the Tomatoes


  1. Peel the jicama and slice/cut into 1/4 inch sticks
  2. Add jicama with red pepper flakes and half of the lime in a bowl
  3. Chop the plum tomatoes and cilantro, set asside
  4. Dice the jalapeno’s discarding the seeds
  5. Dice the onions and red pepper, set aside with jalapeno’s
  6. Throw about half of the chopped cilantro with the jicama and refrigerate mixture
  7. Warm up a pan with a little oil
  8. Trim and cut the pork tenderloin into strips or cubes
  9. Apply salt, pepper and other spices that you like with pork ( paprika! )
  10. Add pork and saute until brown, roughly four minutes
  11. Remove pork to a bowl
  12. Add onion, red pepper and jalapeno to pan and saute for about five minutes
  13. Add the chicken broth and simmer for one minute
  14. Add tomato and simmer for two minutes
  15. Return pork with any juices
  16. Add remaining cilantro and the juice from the other half of the lime
  17. Cook until the pork reaches 145 degrees farenheit

To serve, add pork and veggie mixture to a a piece of lettuce wrapped to make a food delivery device.


Lettuce should not be used to deliver food. Messy, brittle and just not right. Instead you can make some no-carb revolution rolls and use them for the food delivery device. In this case, you can add the diced lettuce to the food delivery device.
